If you have never tried birch syrup before, you are in for a real treat, but don't expect it to taste anything like maple syrup or you'll be disappointed. This syrup was made here in northern WI. We describe the taste as being a cross between sour apples (giving it a tangy flavor) and molasses. We like to use it as a molasses substitute, in pecan pies, and over chocolate ice cream. We have also been told that it is excellent in mixed drinks.

This birch syrup is pure with no added fructose as is often done by other commercial processors. We also bring our birch syrup to the same (or greater) sugar density as maple syrup, which can also be very difficult to find.
Our experience is that like molasses, our dense birch syrup our does not mold if kept out of refrigeration. As experiment, we had a small, open jar that we stored for more that 10 years in our cupboard and it never molded.
